For many decades, the Château de Chambert has listened to a powerful presence, which makes us live and which makes us feel many emotions: nature.


It is in the service of the latter that we submit ourselves every day thanks to biodynamic agriculture and numerous avant-garde techniques, and it is this which dictates the culinary journey of your Chef. The wine list is by Lin Liu and Philippe Lejeune, and your scenic/architecture experience at chambert is from Toulouse architect Stephane Deligny.

Cooking and Inspiration

It is in the service of mother nature that Vincent submits his inspirations and it is she who imposes his seasonal products. The Chef plays a score guided by nature, with a certain restraint and modernity.

It is through a natural, ethical and sincere cuisine that you will discover a unique world. You will travel the world with menus, an attempt to reconnect the human to the living world.

It is products that respect the environment, food biodiversity and mainly from our fields, our forests, our rivers or our causses that will end in your plate, enhanced by flavours from around the world, original ingredients of which only the chef has the secret. You will (re)discover them with emotion and humility.

Wine list from Lin Liu, Master Of Wine (MW)

This gastronomic journey will be made of excellent food and wine pairings, either by the glass or by the bottle. The wine list is selected by Lin Liu, Master of Wine and in total harmony with our philosophy based on quality and respect for the environment.


The Master of Wine (MW) degree is one of the most prestigious and ambitious titles in the world of wine. To obtain it is to conclude years of efforts to integrate this very demanding circle of 419 members to date. This circle makes up the world's wine elite and advises the largest international institutions.

Lin is from Hangzhou in China and became a Master of Wine in 2020. She advises major institutions around the world. She is also a specialist about the Cahors appellation, her Master of Wine final paper related to the Cahors AOC and the key to a successful classification of the Cahors vineyard.

The wines of Château de Chambert are naturally present, from certified biodynamic agriculture and made by a team of real enthusiasts including Stéphane Derenoncourt and directed by Philippe Lejeune, the local winemaker.

The place,
by Stephane Deligny

This sensory journey out of time is also done with and outside the existing traditional space, thanks to Stephane Deligny, the architect behind all the work of the Château de Chambert.

Author of the first rehabilitations and extensions, this artist-painter of the landscape and, “architect-farmer”, as he likes to describe himself, was also a winegrower of natural wines in Cahors. And it is also naturally that Stéphane's work is in total coherence with Chambert's DNA in the relationship he inscribes in his works, between the terroir and the view of architecture. He proportions the intervention of the architect in the site, with restraint and enthusiasm, as the winemaker can do in the expression of the wine.


Nature is the central pillar of an architecture that respects its terroir, present and happy to accompany the incredible landscape of the Château de Chambert.

His parallel work in painting and sculpture, on mental images allows him to have a more sensitive approach, of the order of feelings, of pure emotion, in total harmony with the landscape.

He designed the restaurant's kitchen open to the dining room, where you will be in direct interaction with the Chef and his teams in order to live an exceptional experience. On the terrace side, a splendid view of an endless ocean of verdant vines leaves you in a state of constant contemplation.
